DJ's chilli recipe.
Makes up to 6 ltrs
Ingredients
3 large onions
1 head of celery
4/5 carrots
6/8 rashers of smoked bacon or pack of cooking bacon
3 (of each) red, yellow and green peppers.
2 tubes tomato puree
½ tube of garlic or whole garlic if you wish.
3 lb. Minced beef
5 tins chopped tomatoes or plum toms. If they are plum toms you will need to squash them down with a potato masher.
5 tins red chilli beans
3 teaspoons of cumin
3 teaspoons dried chilli flakes or chilli powder

Method
Switch on the slow cookers to high. You will need to cook/bring the ingredients up to temperature before adding them to the slow cooker.
Cut up the bacon into a fine dice and fry in little olive oil until golden.
Chop the onions, celery, carrots and peppers into a fine dice and add to bacon with the garlic. If you have a blender it’s easier and a lot quicker to pulse them into a fine dice but be careful not to over blend as it turns into mush. When they have cooked through empty into one of the slow cookers. It’s sometimes better to cook the carrots separately from the rest as they sometimes don’t get soft enough in the slow cooker, if you’re cooking it over night they should be fine.
Fry off the beef then add to the slow cooker.
Heat the tomatoes in the pan and bring to a boil. If you can reduce some of the liquid by boiling so much the better. Add to the slow cooker. When the slow cooker comes to a boil reduce to low.
After cooking for several hours, liquid from the vegetables and some fat rendered from the beef will rise to the surface. It depends on the amount of liquid in the ingredients but if it is too sloppy ladle off some of the liquid. Keep it for soups. Add salt & pepper, tomato puree, cumin and chilli.
Cook in a continuous process for at least 6 hours. You need to keep it on a slow rolling boil rather than cooking it cooling it and reheating it later. It will not come to any harm if you cook it for 12 hours or overnight.
Add the beans about 2/3 of the way through the cooking period. Timing is not exact, but if you add them too soon or stir them too much once added they will break down. Check for seasoning. It will need quite a lot of salt. Keep it on the go until you leave for the show.
For the veggie chilli, repeat the above leaving out the bacon & meat mince and substitute the veggie mince, fromthe freezer section of a foodstore. You will need 1kg of Veggie. Don’t try and fry off the veggie mince as it will stick to the frying pan big style. Just defrost it ahead of time and add it to the slow cooker from the packet.
